【Care Food Kitchen】Bite Size Creamy Chicken

  • 雞髀肉 250 克 (切為 不超過1.5cm x 1.5cm )  
  • 洋蔥 1個( 切為 不超過1.5cm x 1.5cm )  
  • 紅蘿蔔1條 (切為 不超過1.5cm x 1.5cm)  
  • 美國焗薯 1個(切為 不超過1.5cm x 1.5cm)  
  • 無鹽牛油 25克
  • 麵粉 1-2湯匙  
  • 雞湯 100毫升 
  • 牛奶 80毫升



  • Chicken thighs - 250g  
  • Onion 1 - piece
  • Baked potato - 1 piece
  • Carrot - 1 piece  

Chop all the above in 1.5cm x 1.5cm  

  • Unsalted butter - 25g  
  • Flour - 1-2 tablespoons  
  • Chicken broth -100ml  
  • Full cream milk - 80ml  



  1. 肉先預先用鹽及胡椒醃味30分鐘,備用。
  2. 紅蘿蔔先用15-20分鐘,備用。
  3. 在煎鍋以中火先爆香洋蔥直至半熟透。
  4. 加入雞肉,薯仔、紅蘿蔔,煮至熟透。
  5. 加入牛油,待牛油溶化後加麵粉,略炒,加雞湯及牛奶,煮至白汁變杰,轉小火。
  6. 按個人喜好作適當調味。



  1. Season chicken with salt and pepper for 30 mins, for use later.
  2. Blanch carrots for 15-20 mins until they are tender, for use later.
  3. Sweat onions over frying pan until half cooked.
  4. Add chicken, potatoes and carrots. Continue to cook.
  5. Add butter into the frying pan, followed by flour. Keep stirring and add broth and milk gradually. Keep stirring until a thick white sauce has been formed. Turn to low flame.
  6. Season to taste.



This dish follows Level 6 of the Guideline of Care Food Standard, which corresponds to Level 6 of the International Dysphagia Diet Standardisation Initiative (IDDSI).
