【Care Food Kitchen】Portuguese Scallop Risotto

Material:

  • 6 scallops (chopped)
  • Two crab sticks (chopped)
  • 1 onion (chopped)
  • 3 ripe tomatoes
  • Mince 3 cloves of garlic
  • 200 grams of Arborio rice

(Note: The above materials must be cut to a size no larger than 0.4cm x 0.4cm )

  • 500 ml of chicken broth
  • 2 tablespoons of olive oil
  • A small amount of butter
  • A small amount of salt/pepper
  • A small amount of lemon juice
  • A small amount of lemon peel

Ingredients:

  • Scallop 6 pieces (Chopped)
  • 2 crab sticks (chopped)
  • 1 onion (Chopped)
  • 3 ripe tomatoes
  • 3 minced garlic, finely chopped
  • Italian rice (Arborio Rice) 200g

(Note: The above materials should be cut to no more than 0.4cm x 0.4cm)

  • 500 ml of chicken broth
  • 2 tablespoons olive oil
  • Butter in small amounts
  • Salt/pepper in small amounts
  • Lemon juice in small amounts
  • Lemon peel in small amounts

Steps:

  1. Chop the scallops, crab sticks, and onions. Heat a pan and add the onions. Sauté the onions until dry, then add olive oil.
  2. Add minced garlic.
  3. Add Arborio Rice (no need to wash) and stir-fry.
  4. Peel and chop the tomatoes, then add them to the pan and stir-fry.
  5. Slowly add the chicken broth. After it boils, reduce the heat to low.
  6. Cover and cook for 20 minutes. If it boils dry during this time, add a little water/broth and continue cooking.
  7. After 20 minutes, add scallops, crab sticks, soup, lemon juice, and lemon zest.
  8. Add butter and stir, then turn off the heat and cover to bake for three minutes.

Steps:

1. Chop the scallop, crab sticks and onion. After heating the pan over, add onion. Olive oil is added after the onion is fried to dry.

2. Add minced garlic.

3. Add Arborio Rice (no need to rinse) and stir-fry.

4. Peel and chop the tomatoes, add to the pan and stir-fry.

5. Adding chicken broth slowly. Once the water is boiled, turn to lower heat.

6. Cover with a lid and cook it for 20 minutes. During the 20 minutes, if it dried a little, add a bit more water, and continue to cook.

7. After 20 minutes, add scallop, crab sticks, chicken broth, lemon juice and lemon peel.

8. Add butter and stir it. Remove it from heat. Cover with a lid and let it wait for three minutes.

Caregiver's Diet Tips:

  • Arborio rice from Italy is softer and more suitable for people with swallowing difficulties.
  • If the garlic is chopped too finely, it will easily overheat, so avoid adding the garlic to the pan too early.
  • Simply pour the Arborio rice directly into the container; no washing is required.
  • Reserve a small amount of chicken broth, and pour it out at the end.

Food Care Tips:

  • Italian rice Arborio Rice is softer, suitable for people with dysphagia.
  • Finely chop the minced garlic. It's easy to overcook the minced garlic. Avoid putting minced garlic in the pan too early.
  • Pour the Italian rice Arborio Rice straight down. No need to rinse before cooking.
  • Reserve a small amount of chicken broth. Then pour into the pan.

This dish is prepared in accordance with the Care Diet Standards Guideline Level 5 (i.e., Level 5 of the International Dietary Standards for Dysphagia (IDDSI)).

This dish follows Level 5 of the Guideline of Care Food Standard, which corresponds to Level 5 of the International Dysphagia Diet Standardization Initiative (IDDSI).
