Dish: Chicken Fillet with Bok Choy (Level 4)

Theme: Taste as You Like

Food and ingredients:

  • Chicken fillets 70g
  • 60g of bok choy
  • 110ml of hot water ( above 80 degrees Celsius, for meat)
  • 60ml of hot water ( above 80 degrees Celsius, for vegetables)
  • Formulation powder (soft meals, meat) 2g
  • Forming powder (for soft meals, vegetables) 1-2g
  • 200g pumpkin

Cooking steps:

  • Soft-serving chicken fillets
  • First, wash the chicken strips. Marinate the chicken strips with a little sugar, soy sauce, and sesame oil for 15 minutes, then steam them for about 10 minutes.
  • Place the chicken strips, soft meal forming powder, and hot water or soup ( above 80 degrees Celsius) into a mixer and mix until there are no lumps and the mixture becomes a paste.
  • Pour the mixed chicken strip batter into a mold and let it set for about 2 minutes until it solidifies. Then unmold and it's ready to eat.
  • Soft-serving bok choy
  • First, wash the bok choy hearts. Then blanch the bok choy hearts for about 5 minutes.
  • Place the bok choy, soft meal forming powder, and hot water or soup ( above 80 degrees Celsius) into a blender and blend until there are no lumps and the mixture becomes a smooth paste.
  • Pour the mixed vegetable paste into the mold, let it solidify for about 1 minute, and then unmold it.
  • Sauce (pumpkin juice)
  • Peel and cut the pumpkin into chunks, then steam until cooked ( about 10 minutes ) .
  • Strain the pumpkin and add appropriate amounts of salt, vegetable oil, and beverage thickener.
