Dish: Filipino-style Shredded Chicken Rice (Level 5)

Dishes: Chicken Pastil (level 5)

Food and ingredients:

- 900g boneless chicken

- 2 lemon leaves

- 7 cloves of garlic

- 5 bay leaves

- 200 grams of broccoli

- 1 carrot

- 1 potato

Seasonings and sauces:

- 1 tablespoon of butter

- 2 tablespoons of light soy sauce

- 3 tablespoons of dark soy sauce

- 2 tablespoons of oyster sauce

- 1/2 tablespoon of sugar

- 1 tablespoon of lemon juice

- Salt 1 pinch

- A pinch of pepper

- 1 tablespoon of honey

- 1 tablespoon of egg tofu

- Turmeric rice (as needed)

Cooking method:

  1. Remove the chicken skin and cook it with lemongrass, 4 cloves of garlic, ginger, bay leaves, and a pinch of salt for about 15 minutes. After 5 minutes of cooking, add all the vegetables, cook until done, remove from heat, strain the broth, and set aside.
  2. Use a blender to chop the chicken, carrots, potatoes, and broccoli separately.
  3. Sauté garlic in butter in a pot until fragrant, then add minced chicken, light soy sauce, dark soy sauce and other seasonings. Sauté for about 5 minutes, then add chopped carrots and the broth from cooking the chicken. Cover and cook for 10 minutes. Finally, add potatoes and broccoli.
  4. Finally, add honey, lemon juice, and oyster sauce, adjust the flavor, and turn off the heat.
  5. Decoration and plating: banana leaves, broccoli, carrots.

  6. Sauce design: Mix dark soy sauce, light soy sauce, honey, and oyster sauce.

Ingredients:

Boneless chicken 900 g

- Lemon grass 2 stalks

- Garlic 7 cloves

- Baby leaves 5 pcs

- Broccoli 200 g

- Carrot 1 pc

- Potato 1 pc

Seasoning and Sauce:

- Butter 1 tbsp

- Light soy sauce 2 tbsp

- Dark soy sauce 3 tbsp

- Oyster sauce 2 tbsp

- Sugar 1/2 tbsp

- Lemon juice 1 tbsp

- Salt 1 Pinch

- Pepper powder 1 pinch

- Honey syrup 1 tbsp

- Egg tofu 1 tbsp

- Cooked rice in turmeric powder Appropriate amount

Cooking Method:

  1. Remove the skin of chicken and boil together with lemon grass,4 cloves of garlic, ginger, bayleaves, pinch of salt for about 15 minutes boiling while boiling put all the vegetable after 5 mins take it all and remove the water stock and set aside.
  2. Use the blender to make chicken mince also the carrots, potato, and broccoli separately.
  3. Saute garlic in a butter put the mince chicken soy-sauce, dark sauce sauce and some seasoning for about 5 mins and put the mince carrots and add some chicken stock from boiling and cover for 10mins and put the potato and broccoli.
  4. After that add the honey, lemon juice and the oyster sauce. adjust the taste and turn off the fire.
  5. For Garnish & plating: Banana leaves, Broccoli, Carrots.

  6. For the sauce design: mix this-dark soy sauce, light soy sauce, honey & oyster sauce.
