Dish: Braised Beef Brisket with Radish in Chu Hou Sauce (Grade 4)

Dishes: Beef Brisket with white Radish (level 4)
Food and ingredients (white radish):
- 300 grams of white radish
- 3 slices of ginger
- 2 cloves of garlic
- 3 grams of enzyme powder
- Water (for cooking) 500 ml
- Water (for preparation) 150 ml
Food and ingredients (beef):
- 100 grams of minced beef
- 1 tablespoon of oil
- 1 clove of garlic
- 1 shallot leaf
- 20 grams of onion
- 3 grams of enzyme powder
- 140 ml of hot water
- 1 tablespoon seafood sauce
- 1 tablespoon of oyster sauce
Seasonings and sauces:
- 1 clove of garlic
- 1 shallot leaf
- 40 grams of onion
- 1 tablespoon of oil
- Chicken broth 250 ml
- Thickener 3 grams
- 1 tablespoon of hoisin sauce
Cooking method:
- Heat oil in a skillet, then add garlic, shallots and onions, and sauté until fragrant. Next, add chicken broth and simmer over medium heat for about 5 minutes.
- Bring 500 ml of water to a boil over medium heat, add the white radish, and cook for 15 minutes. Then add the ginger and garlic and continue cooking until the white radish is soft.
- Marinate the beef in seafood sauce and oyster sauce for 10 minutes. Heat oil in a skillet, then add garlic, shallots and onions and sauté until fragrant. Then add the marinated minced beef and cook for about 3 minutes until cooked through.
Preparation method:
- Place the sauce ingredients in a bowl, then add 3 grams of thickener and blend for 3 minutes with a blender until smooth and free of lumps.
- Place 200g of cooked white radish in a bowl, then add 150ml of hot water and 3g of mold powder. Add a few drops of sauce to enhance the color and flavor. Blend in a blender for about 3 minutes until smooth and free of lumps. Then pour into the mold and let it sit for 15 minutes.
- Place 75g of cooked minced beef in a bowl, then add 3g of mold powder and 140ml of hot water. Blend with a mixer for about 3 minutes until smooth and free of lumps. Then pour into the mold and let it sit for 15 minutes.
- Plating: Place the cooked white radish and beef on a plate, then drizzle with sauce. Garnish with a few small decorations before serving (the decorations are not edible).

- Boil white Radish with 500 ml water in medium heat for 15 minutes put ginger and garlic, cooking until white Radish soft.
- Marinate beef with hoisin sauce and oyster sauce for 10 minutes. Heat the oil in a frying pan then adds garlic shallots and onion stir fry until fragrant then put marinated minced beef cooking for about 3 minutes or until cooked.
Preparation
- Put sauce in a bowl then add 3 grams of thickener and blend for 3 minutes until soft and smooth without lumps.
- Take cooked white Radish about 200 grams put in a bowl then add 150 grams hot water and 3 grams molding powder put a few drops the sauce for the color and taste then blend about 3 minutes until soft and smooth without lumps then put it in the mold and let it sit for 15 minutes.
- Take cooked minced beef about 75 grams put it in bowl then add 3 grams molding powder and 140 ml hot water then blend about 3 minutes until soft and smooth without lumps then put it in the mold and let it sit for 15 minutes.
- Decoration: Put cooked white radish and cooked beef on a plate then pour over the sauce. Put a little garnish on top of the dish ready to serve. (garnishes on top of food cannot be eaten).
