Purpose

  • Learn cooking secrets from star experts and working chefs, improve professional skills and enhance employment competitiveness

  • Communicate with the elderly and experience the work of residential care

  • Understand the eating needs of the elderly and contact their families with "care food"

  • Learn how to cook "care food", understand the operation of residential homes, open up new employment opportunities, and cope with the challenges of the aging society

  • Provide a series of online and physical workshops, both practical and theoretical

  • New mentor-apprentice matching, exchange and cooperation experience: inviting students from the International Culinary Institute, the Chinese Culinary Institute and the Department of Child Care, Elderly and Social Services of the Hong Kong Institute of Vocational Education (Shatin), members of the Vocational Training Council (VTC), to serve as apprentices

  • Stimulate the potential of students, encourage students to display their creativity and show off their talents, and prepare for the finals together with the shortlisted chefs, such as participating in optimizing recipes, promoting works to compete for the "Most Popular Award" in public voting, and assisting with marketing matters, etc.

  • On the final day, masters and apprentices work together to complete the competition, and students are encouraged to help with cooking, displaying works, and introducing the themes, design concepts and stories behind the works, etc.

List of training activities

We provide various workshops and experience activities for apprentices to learn about nursing food cooking techniques and grade classifications. We also arrange mutual teaching experiences between masters and apprentices to enhance the tacit understanding between masters and apprentices throughout the training period. Details are as follows:

  • Dr. Law Ka-tung, Assistant Director of the Institute of Human Communication Sciences, The Chinese University of Hong Kong, and Amy Cheng, founder of Sweet Story, were invited to share a series of basic theories, level testing techniques and cooking tips on "care food".

The happiest thing is that I can learn about caring for food. Before participating in the competition, I thought nursing food was just like mushy food. But after participating in the competition, I discovered that nursing food can be cooked to look like ordinary dishes. And the meals are also very diverse, with varying degrees of softness, hardness, and texture.

 

As a young person, I think it is necessary for us all to understand nursing food, promote this concept, and help people with swallowing difficulties regain their appetite and improve their lives.

What impressed me most was talking on the phone with the master one night for about an hour and a half. It doesn't matter, the point is that it was already past one o'clock in the morning. Because I wanted to better understand the feelings and ideas behind the dishes the chef really wanted to express, so I talked with the chef for a long time. In the end, the conclusion we came to was "missing my hometown." I learned that the chef has always missed the life in the countryside and the lotus leaf rice cooked by his mother-in-law, so he hopes to recreate the taste of the old days so that the elderly with dysphagia can reminisce about the past.

 

I believe that as a chef who makes care food, in addition to considering the safety and taste of food, the more important thing is to put your heart into it. Just like the heart-shaped pattern on the care food logo, it means that you have to put effort into making the food and consider the mood of the user.

Since I have never been exposed to nursing food before and I don’t know how to do it, I don’t know if I can help the master in the competition. However, through the activities of the conference, such as cooking workshops, exchange activities with the elderly, level test teaching, etc., I learned the principles of making care food. In addition, through practicing with the master and team members, we coordinated the division of labor. Finally, I assisted in setting up and sharing the dishes during the competition, and the competition was successfully completed. I deeply felt the "from bitter to sweet" process of the entire competition.

During the competition, because the time was very short, only thirty minutes, everyone was very nervous. Sometimes you think of many things perfectly, but when it comes to the game, you are in a hurry. When there were only a few minutes left in the competition, the chef and I were very nervous, but fortunately we had a tacit understanding and performed well on the spot. We worked together to quickly arrange the dishes and finally successfully completed the dishes. This experience was very unforgettable.

 

Being able to compete in a team with a professional chef for the first time was a rare experience that I had never tried before, and the chef provided a lot of valuable advice, which will be very helpful for my future employment.
